If my husband and I were on a game show and the million-dollar question was "What is your wife’s favorite dessert?” He would say, “ My wife’s not a dessert person.”
He would say that and then we would lose the money because obviously, since I’m not a dessert person, I would have said something boring like vanilla ice cream. But now. Now he is going to have an answer to that brilliantly devious question. Now, he can say, “ My wife’s favorite dessert in the world is the coconut cream pie from The Bicycle Thief. Obviously. ”
It’s good to be prepared for these things because honestly, you just never know when you might find yourself in the midst of one of these game shows. And now we are prepped for that unlikely possibility.
There is something incredibly nostalgic and intensely satisfying about a piece of pie after a hearty meal. It’s the perfect little ending. The perfect dessert really. Decadent and familiar. Simple and memorable.
And now? Now I have found the most delicious pie of all. When I first tasted it, I felt complete and unambiguous bliss. Believe me when I say, this is the best pie you will ever have. Ever in your life.
My husband and I went to The Bicycle Thief for dinner with my brother and sister-in-law last month, and when I had a bite of their coconut cream pie at the end of a deliciously perfect meal, I fell in love. It was flawless in the most unmistakable way. A chocolate-buttery crust and a light, not overly sweet yet oh-so-decadent filling. It was for me, the most divine pie I had ever tasted. And I say that with the strongest conviction. When I came home, I frantically googled trying incessantly to find a recipe that resembled the one I tasted that night.
Coconut cream pie with perfect chocolate crust...
Nothing.
Most amazingly fluffy coconut cream pie in the world + slightly salty chocolate shell...
Nope.
Coconut cream pie recipe with not too sweet filling and chocolate base...
Zilch.
I tried hard to decipher the ingredients. Cream, of course. Coconut, naturally. But I just couldn’t seem to get the measurements quite right. I felt frustrated and perhaps a bit sad at the thought that I might never have the opportunity to make this pie on my own. On a whim, just because I wanted to. But sometimes things work out for the best, because not only did the wonderful people of The Bicycle Thief share this remarkable recipe with me, but they also said I could share it with all of you. It's true.
Before I go any further, I should tell you that I made this pie twice this past weekend. The first, for a lovely little dinner party we hosted and the second time, the very next day in fact, just for us. That’s right. We ate almost the entire pie on our own the very next day. And you know, we didn’t feel a speck of guilt because frankly, don’t we deserve to swathe ourselves in pure, unadulterated indulgence every now and then?

Coconut cream pie is my favourite. I grew up in Wolfville and my friend's family own a little diner that sell another (less refined) version of this dish. Such comfort food. Your photos are perfect, as usual!
