{un} traditional lemon- blueberry cobbler
I must admit that for the most part, the first signs of autumn make me happy. I feel ready for chunky sweaters and stylish booties and dark denim. In fact, I welcome apple pies and homemade soup enthusiastically. I guess a small part of me yearns for cooler temperatures and colorful leaves, brisk walks and happy, predictable routines.
But this year is different.
The summer is half over and I feel it has gone by so quickly. I’m not ready to give up this carefree life. Filled with salty ocean air, late night gatherings with great friends and day trips to local landmarks, summer is the epitome of effortless living. There's something so refreshing and enlightening about this time of year.
When I was little, seeing the sun setting on a warm summer night meant I would hear my mother's voice calling from a distance. I knew the day had come to an end and it was time to go inside and unwind before bed.
The balmy, night air felt freeing. It was as if I could literally gallop into the sunset. Like those last 20 minutes of dim sunlight would never end.
And I didn't want it to end. None of us did.
By the end of a playful day my braids were tangled, tethered and coming undone. My clothes were scuffed and my little face was filthy and grim and yet, I could have stayed and played for many more hours. Grumbling tummy and all.
I miss those days.
Mostly because they represent a time where things were unfussy and innocent. And I think the human spirit yearns for that- the ease and virtue of childhood. The blissful feeling of simplicity in its’ purest form.
The really wonderful part however, is that summer is not over. Not yet.
There are more celebrations underway. Many more starry nights ahead, filled with good friends and good food. Many more beachy days filled with salty air, sun-kissed faces and tangled locks. Many more opportunities to host impromptu backyard parties and savor local summer produce.
My mom always had fruit pies and cobblers baking in the oven. The fruit always changed with the seasons- berries and peaches in the summer and apples and other orchard fruit in the fall.
I’ve professed my undying love for almond flour before, and this is just another example of how versatile it is. This cobbler is not overly sweet and the almond topping gives it a ‘cakey’ texture. It has a hint of lemony tang which feels so refreshing to the palette. It’s the perfect summer dessert and you can throw it together in under 10 minutes. I’ve made it so much this past week that I think I can do it in under 5 now.
Who wouldn’t want to make a delicious, no fuss, healthy dessert in under 5 minutes? One that will leave your children cheering and your guests asking for more.
Make this cobbler. You won’t regret it.
