roasted cauliflower soup with garlic, thyme + cumin

Guys, I have a confession to make: I’m a pretty intense blog devotee. I mean, a fiercely passionate one. As in, borderline obsessed. I read at least a dozen blogs a day and I love every single one. After the children are off to school and I have a mere 20 minutes to get ready for work: most people would dash upstairs, throw on some clothes, slap on some mascara and lip balm, take a few sips of tea and be on their merry way.

But not me.

I use those hurried 20 minutes to be productive: I nestle into my sofa and read a few blog posts while sipping cold coffee and shoveling soggy cereal into my mouth. Time management isn't one of my strong points I realize, but I'm working on it. I really am.

I’m sure my husband is grinning as he reads this because I am usually rushing everyone out the door as:  I absolutely have to get ready for work or I am going to be late! Everyone should really be on their way. Right now!

He may not be grinning actually.

And where does one find the time to read a dozen ore more blogs every day you ask?

Perhaps in the midst of making dinner? Filing your taxes? In between loads of laundry?Maybe when you only have 20 minutes to get ready for a very important meeting? 

And it’s not that I am idle. Or not busy enough. Most days I feel incredibly rushed and unbelievably hurried. More often than not, I feel that every last second of my day is spoken for and yet I still try and cram things in. 

20 minutes before I have to pick up the children? Great time to grocery shop!

15 minutes before piano lessons end? How 'bout I check out some floor tile samples!

There is absolutely no need for this type of over scheduling and over committing and yet, this has become the reality of my day-to-day life. Rushing-cramming. Rushing-cramming.

But reading my favorite blogs is my guilty little pleasure. I find myself laughing and pondering and immersing myself in some really wonderful prose. I can’t wait to see the new home décor DIY projects, the amazing photographs, the funny anecdotes, the spectacular fashion pairings, the deliciously perfect food. 

I promise I’ll do a post dedicated to some of my very favorite blogs in the near future but for now, I’m going to leave you with this healthy, easy-to-prepare and incredibly tasty soup. Cauliflower seems to be rampant on food blogs lately and I was inspired to create a little something of my own.

Rarely do I make something I am so incredibly excited about, that I literally leap forward wanting to share it with everyone that crosses my path. And yet, I also don't want to part with a single drop. With the addition of fresh thyme and fiery spices, this is the ultimate comfort food.

I can only liken it to a cozy blanket or a hot cup of tea, hot chocolate on a snowy winters day - all of the quintessential comforts of home come together in this soup. And the most amazing thing about it? It's super easy to make. I mean, so incredibly easy that it will leave you wondering if in fact you've missed a step. You haven't. This is easy stuff.

I'll only warn you that your efforts may go unnoticed, as everyone who has sat down to a bowl of this hearty goodness inhales it in mere moments. It’s really that good. Even though I’m a bit of a soup purist, I think everyone will agree that this one is pretty darn wonderful. And if you don’t like soup, I implore you to at least try this one.

It’s buttery ( without the butter.)

It’s creamy ( without the cream.)

It's velvety ( without the velvet.)

It’s unbelievably rich and decadent and oh so tasty. And I know you’re going to love it. I just know it.

Oh, NIC. I don't even have to taste this to know you have done it up right. Why don't you have your own show?

This is the stuff of a true cook...and roasted cauliflower is a genius base. If we cross paths in person at some point we must cook together. Can't wait to try this!
