Grilled corn salad with avocado, mint + lime-cumin dressing

My children are right. My obsession with salads is growing rapidly and I’m afraid it’s only going to become more pronounced as the summer progresses. Something happens to me amidst warm summer months that makes me abandon my oven altogether and do all my cooking outdoors.

My kids feel the wrath. Unlike us, they wouldn't mind the occasional baked ziti or homemade pizza.

But friends, it's summer!

And that means lighter fare all around. I can't bring myself to cook dishes that call for heavy ingredients and high cooking temperatures. Hard as I may try, I simply can't indulge their enthusiasm for hot meals.

And what do they know about cooking in a sweltering kitchen anyway?

Salads and outdoor grilling is the way to go during warm summer months and the end result is always a delicious, effortless meal. I’m sure their appreciation for simplicity will increase as they grow older (fingers crossed.) 

It’s true. I probably overuse mint during the summer, and my fruit kebabs are generous and abundant in number, but they secretly enjoy every morsel. Protesting aside, deep down they are nodding their heads at my grilled corn salad and thanking me.

I just know it.

What I love most about this dish is that it tastes so incredibly fresh. Frozen or canned corn will not cut it in this recipe, but grilling corn on the BBQ takes no time at all. The tomatoes and avocados are such a great compliment and the mint, cumin and lime add that special zest. We’ve been eating it for days (hence the passionate gripes.)

Again though, smiling.  Way down deep.
